Hurry!! There’s only a few more minutes left to eat cherries. Okay, maybe there’s more than a few minutes but the cherry season is definitely wrapping up, paving the way for a golden month of big, fat peaches, nectarines and apricots. In the last precious cherry moments we have together, I’d like to share what I think is my best recipe of the summer so far: a deeply fudge-y, packed with superfoods raw chocolate cookie with a fresh, juicy cherry nestled sweetly inside. The perfect antidote to a summer chocolate craving, they are fast, easy, and you don’t even have to turn on your oven.
